Olive oil contains absolutely no cholesterol. Studies indicate that a Mediterranean diet low in saturated fats such as butter, lard, and other animal fats, but list in mono-saturated fats such as olive oil, in addition to grains, fruits, and vegetables, helps keeps the artery-clogging LDL (low-density lipoprotein, or bad cholesterol) low while maintaining healthful levels of HDL (high-density lipoprotein, or good cholesterol). The HDL has a preventive effect on cardiovascular illness because it may help to eliminate LDL from the blood by carrying it to the liver. In addition, many medical researchers and nutritionists agree that olive oil is a good source of vitamin E which may protect against cancer and heart disease. 

Our “Saifan” and “Green Koura” extra-virgin olive oil should, like all other olive oil, be stored in a dark, cool place. The color of olive oil does not matter, but the aroma and flavor do matter. Acidity of extra-virgin olive oil should less than 0.8%. With extra-virgin olive oil, you can fry, sauté, stir fry, and deep fry. The same oil can be filtered and reused multiple times since it is very stable at high temperatures.
